At an elevation of 5350 ft above sea level, baarbara estate has been reaching for the clouds since 1896. They have been growing and perfecting each aspect of coffee growing to its processing. While perfecting the coffee, they received multiple awards for sustaining the environment and treating their employees fairly. Apart from coffee, the estate is also home to 100 different species of birds and mammals. They have been working with multiple authoritative bodies to maintain the biodiversity, which they call the coffee bio system. This baarbara estate coffee is hazelnutty with a tinge of coconut. It is heavy-bodied and is roasted to a medium-dark to give you the perfect kick in the morning. It is complex in its flavour with a lingering aftertaste, making it ideal for a strong black coffee or a milk-based beverage. For a cold-brew, we suggest going 50-50 with baarbara hsd and thogarihunkal washed to bring out the best flavour.

Anaerobic Fermentation – The ripest beans are picked and pulped and placed in hermetic tanks and the fermentation goes on for a few hours to days depending on environment and recipe ( we experiment with tropical fruits, spices etc). A close watch on the temperature and ph results in one of our most unique and special lots till date. These coffees taste anything from gingerbread, cinnamon, tropical fruits or even bubble gum.

It’s time for another Producer Series coffee! This time around, we’re featuring coffee from Riverdale Estate—a farm we featured twice in this series last year! The farm gets its name from a freshwater stream called ‘Riverdale’ that meanders through it. This lot was processed using a unique method, in which grapes were added to the fermentation process. Ripe red cherries were handpicked from selective higher elevation blocks of the estate. After the floaters were removed, high brix cherries were triple washed in clean spring water and fermented with green grapes under a controlled environment for 3 to 4 days. This lent the coffee its warm aromas of freshly baked chocolate chip cookies and cinnamon that make it perfect to bring in the winter season. The coffees were exposed to direct sunlight for 2-3 days with the pH level and temperature being monitored regularly to ensure cup consistency. Post fermentation, the coffees were transferred to raised beds and sundried for 2-3 days. After this, they are then transferred to partially covered raised beds. The moisture level was recorded per day to ensure uniform drying. Finally, after 21-30 days, the coffees were allowed to rest in green pro bags for 4-5 weeks. Our roasters profiled this as a light roast to further enhance its intricate flavour notes of cranberry, apricot, lychee and black tea.

Producer Series Lot 8 | Riverdale Estate Grape Fermentation (Inverted Aeropress)

Enjoy a trip to your childhood with our latest seasonal light roast from Riverdale Estate with sweet aromas of bubblegum and candy. This lot has been processed naturally with coffee cherries being fermented for 72 hours — a method unique to the farm. Each sip has a juicy mouthfeel of pineapple and a sweet aftertaste of oranges, flavours that are amplified in a Pour Over, French Press, AeroPress or as a Cold Brew. Riverdale Estate is located in the Shevaroy Hills of Tamil Nadu and, since 1920, three generations have worked hard to consistently enrich the quality of coffee that grows here. A fresh water stream called Riverdale meanders through this estate, lending the farm its name. Picked and processed to perfection by a handful of warm, welcoming, friendly workers who have been part of the Riverdale family for many seasons, the coffee cherries are fermented and then sun dried on raised beds for 25-30 days. This year, we are partnering with Kerehaklu Estate to get you our first Robusta offering, ever. This R-graded coffee is the first time that the estate has processed specialty grade Robusta. Growing this harvest was also an example of the estate’s push towards sustainable farming, with the use of just rain water instead of normal irrigation techniques. Halley Huli Natural Our friends at Kerehaklu used a natural processing technique called ‘Halley Huli’ for this lot. It is an anaerobic, double float process where the cherries are left in ceramic vats overnight. It also has a considerably shorter fermentation time as compared to Arabica. To process this lot, Kerehaklu processed CxR — Congensis crossed with Robusta. Coffee Congensis is closely related to both Arabica and Robusta, and is known to improve the flavour profile of the coffee. Kerehaklu is constantly pushing the boundaries with their coffee, and this clean, smooth lot can prove to be a game changer for Indian Robusta. This coffee has a heavy body, predominantly chocolatey taste notes and a creamy, plush mouthfeel that is perfectly finished off with an aftertaste of roasted almonds and caramel. This coffee’s beautiful aromas of baking chocolate, roasted nuts and caramel are paired best with milk, and so our roasters recommend brewing this as an Espresso or in the Moka Pot. Kerehaku Estate Robusta (Cold Brew)

Our Dhak Blend is an ode to one of our favourite Indian trees with its colourful flame-like flowers that signal the onset of Spring. The coffees used in this blend are naturally processed which means that the coffee bean is dried with the cherry, resulting in complex, fruity and sweet flavours. Roasted dark to bring out flavours of dark chocolate and fruit jam, this blend’s heavy cocoa body leaves a smooth lingering aftertaste. This blend pairs well with milk, and our roasting team recommends it for espresso-based drinks as well as manual brews such as the Moka Pot and the French Press. Our all-time favourite pulp sun dried coffee from Kalledeverapura Estate is back! This year’s harvest from Kalledeverapura has a medium body and a light, tea-like mouthfeel which our roasters recommend enjoying as an espresso, Cold Brew, Pour Over or AeroPress. With notes of brown sugar, roasted almond, and raisin, this coffee is perfect to start your day with! Kalledevarapura Estate dates back to the 1900s and was amongst the first farms we visited! The lush estate is situated at an altitude of around 1300m in the picturesque Bababudangiri Hills in Chikmagalur, Karnataka. Kalledevarapura’s Arabica is shade grown, and the estate is covered with jackfruit, fig, and silver oak trees. The estate uses a special hybrid processing method for the honey sun dried we source from them. Like wet-processing, the outer skin of the coffee fruit is removed mechanically. The coffee beans are then left to dry out in the sun on ventilated racks with the remaining fruit intact, giving the coffee a unique flavour! Estate organic coffees, you will love this one! Nachammai Estate was originally part of a larger plantation which belonged to the Roman Catholic Diocese of Mysore. It was acquired by Palaniappan Ramanathan's family in 1979, with his father spending several years restoring the estate before Palaniappan took over himself. Nachammai has its own pulping machines and dries its fully-washed Selection 9 beans in a sun-soaked drying yard. In addition to coffee, the estate also produces pepper and oranges. Palaniappan is now undertaking efforts to convert part of the plantation to an organic farm while adding homestay facilities. Monsoon malabar aa is s.795 varietal blends that are grown and ripened at 900 ~ 1300m.s.795 was developed in the 1940s, using ‘kents’ arabica, known for its high quality. they yield bold beans, superior quality, and a balanced cup with subtle flavor notes of mocca. these beans spend up to 3~6 months of monsoon process, at regional monsoon centers in the western ghats of india. Monsooned coffee or coffee beans ’swollen’ with moisture from the air, is prepared at the curing works situated on the west coast of southern india. stored in special warehouses, moist monsoon winds circulate around the coffee beans, making them swell in size and take on a mellowed but aggressive, musty flavor. this process yellows the bean and reduces the acidity, imparting a heavy, syrupy flatness reminiscent of aged coffees. resulting in a flavor profile with a practically neutral ph balance. Please note: We sell 160 grams of green beans, the roasting service is free. monsoon malabar beans are larger in volume. we run our machine by volume, which works best for our roaster. therefore, in order to keep the consistency in our roasts, we roast the same volume of all beans. the same volume of monsoon malabar is 160 grams, compared to other beans at 220 grams. after roasting the beans lose 12~20% of the mass. when you receive the beans from us, it will not be 160 grams. we will write the final weight of the roasted beans on the package. we also provide a video of the roast.

They have been awarded the best cup of india award several times. This thogarihunkal washed coffee is chocolatey and slightly floral. It is sweet and full-bodied, perfect for starting the day. We really like this as an espresso due to its cocoa notes, and as cold brew, due to its natural sweetness. It also has a complex flavour of sweet lime, which makes the coffee cup bright, making it perfect for a manual brew.
