At an elevation of 5350 ft above sea level, baarbara estate has been reaching for the clouds since 1896. They have been growing and perfecting each aspect of coffee growing to its processing. While perfecting the coffee, they received multiple awards for sustaining the environment and treating their employees fairly. Apart from coffee, the estate is also home to 100 different species of birds and mammals. They have been working with multiple authoritative bodies to maintain the biodiversity, which they call the coffee bio system. This baarbara estate coffee is hazelnutty with a tinge of coconut. It is heavy-bodied and is roasted to a medium-dark to give you the perfect kick in the morning. It is complex in its flavour with a lingering aftertaste, making it ideal for a strong black coffee or a milk-based beverage. For a cold-brew, we suggest going 50-50 with baarbara hsd and thogarihunkal washed to bring out the best flavour.

Process : Anaerobic Fermentation Tasting notes- Orange, sweet lime, honey nectar with floral finesse. Anaerobic Fermentation – The ripest beans are picked and pulped and placed in hermetic tanks and the fermentation goes on for a few hours to days depending on environment and recipe ( we experiment with tropical fruits, spices etc). A close watch on the temperature and ph results in one of our most unique and special lots till date. These coffees taste anything from gingerbread, cinnamon, tropical fruits or even bubble gum.

It’s time for another Producer Series coffee! This time around, we’re featuring coffee from Riverdale Estate—a farm we featured twice in this series last year! The farm gets its name from a freshwater stream called ‘Riverdale’ that meanders through it. This lot was processed using a unique method, in which grapes were added to the fermentation process. Ripe red cherries were handpicked from selective higher elevation blocks of the estate. After the floaters were removed, high brix cherries were triple washed in clean spring water and fermented with green grapes under a controlled environment for 3 to 4 days. This lent the coffee its warm aromas of freshly baked chocolate chip cookies and cinnamon that make it perfect to bring in the winter season. The coffees were exposed to direct sunlight for 2-3 days with the pH level and temperature being monitored regularly to ensure cup consistency. Post fermentation, the coffees were transferred to raised beds and sundried for 2-3 days. After this, they are then transferred to partially covered raised beds. The moisture level was recorded per day to ensure uniform drying. Finally, after 21-30 days, the coffees were allowed to rest in green pro bags for 4-5 weeks. Our roasters profiled this as a light roast to further enhance its intricate flavour notes of cranberry, apricot, lychee and black tea.

This year’s seasonal offering from Kerehaklu Estate is a monitor inoculated washed processed coffee. This offering makes for a clean cup with its aroma of dried dates and caramel, and long, sweet aftertaste of citrus fruits and berries. Our roasters recommend this as an espresso, cold brew, pour over and AeroPress. Monitor Inoculated Washed The team at Kerehaklu experimented with inoculants to process this lot using a Lactobacillus strain. Named after monitor lizards found in abundance at the estate, this process requires coffee cherries to be were sequentially fermented with inoculants which sped up the demuciligination of the beans, giving this coffee a rounded flavour profile of molasses, grapefruit and dried blueberry.
